  • lemon - 1-2 pieces;
  • sugar - 125 grams;
  • eggs - 2-3 pieces;
  • cornstarch - 0.5 teaspoon;
  • butter - 90 grams;
  • salt - pinch.

Delicious lemon cream. Step-by-step recipe

  1. We rub the peel with lemons on a fine grater, only the uppermost, brightest part (we need 1 teaspoon) and squeeze out the lemon juice (we will use 90 milliliters).
  2. Corolla grind eggs and sugar, mix with lemon juice and zest, add sugar and a pinch of salt, cornstarch, finely chopped butter.
  3. We put on a water bath and, constantly stirring, bring the mass to thickening. The cream itself should not boil, but its temperature should be high.
  4. Remove from the fire and immediately filter on a sieve to remove lumps and zest.
  5. In order not to form a dried up crust during cooling, it is necessary to cool it sharply. To do this, we put the vessel with lemon cream in a bowl of ice water and mix it quickly, bring it to a temperature below room temperature.

Kurd is ready! He has a very pleasant creamy, lemon flavor. This cream is perfect for cake and tartlets, biscuit cake and as a filling in a cake, for pancakes and just - with a spoon.
